15 Minute Meal: Fish with pesto
3-4 tbsp basil or parsley pesto
2 tbsp lemon juice
600 skinned and boned white fish fillets
Freshly ground black pepper to taste
1 tbsp olive oil
Preheat oven to 200C. Combine pesto and lemon juice. Spoon over one side of the fish. Heat the oil in a frying pan suitable for the oven. Pan-fry the fish - pesto-side up - for one minute. Place in oven and cook for one to three minutes, depending on thickness. Great served with small boiled potatoes and steamed mixed greens. -Serves 4
