15 Minute Meals: Minted Lamb Burger
400g minced lamb
1 medium shallot, diced
1 tsp mint jelly
salt and freshly ground black pepper to taste
3/4 cup plain yoghurt
1/2 cup each: diced cucumber, chopped mint
pinch each: ground cumin, paprika
spray olive oil
Combine the lamb, shallot, mint jelly and seasoning. Form into four patties. Combine the yoghurt, cucumber, mint leaves and seasoning to make a sauce. Panfry the burgers for five minutes each side, or until cooked. Great served in toasted burger buns with chopped rocket, tomatoes and topped with the yoghurt sauce. - Serves 4
