500g beef mince
2 slices multigrain bread, grated
1/4 cup (70g) barbecue sauce & extra for basting
Preheat the oven to 180C. In a large bowl, combine the mince, egg, bread and sauce.
Divide the mixture evenly among the muffin cups. Brush the tops with a little more sauce and bake until cooked through, about 20 to 25 minutes. Remove from oven and rest.
Optional: For the "icing", spoon warm, leftover mashed potato onto the top of each meatloaf in a swirling motion to make your "cupcakes".
